Jalapeno Popper Stuffed Mushrooms combine two of your favorite appetizers into one of the best mushroom bites you will want to make again and again.

Ingredients
Mushrooms. I’ve used brown mushrooms. I’m not sure why they’re now called “brown mushrooms” at our grocery. In the past, they were called portabella or baby bella or sometimes cremini. You’ll need the whole mushrooms, not sliced.
Bacon. The recipe calls for fully cooked, thick cut bacon. You’ll want to have that cooked earlier since it’s easier to crumble into tiny bits when it’s not freshly made. Once it cools down, you can crumble it easier.

Jalapeno. I like to remove the seeds and membranes so I taste the jalapeno instead of just the heat. Sometimes, it can be a little spicy.
Cream Cheese. You’ll need to leave it on a counter for awhile so that it’s softened before you start mixing it.
Cheddar Cheese. There’s just a little bit of cheddar sprinkled on top. I like it for its taste as well as the attractive color. Use your favorite or any shreddable cheese you have on hand.

Jalapeno: Raw Or Sauteed?
Before you start, decide if you want the crunch and freshness of the jalapeno pepper or not. If you prefer the crunch, there’s no need to pre-cook them in a saute pan.
However, if you prefer a bold, slightly sweet spicy flavor, you’ll want to saute the jalapeno first.
In either case, you’re going to need to mince the jalapeno, which means cutting them into pieces as small as possible.

What If I Don’t Want Spicy Jalapenos?
Do you not like spicy peppers? Or, maybe you want to serve these mushroom bites to children?
In that case, replace the jalapenos with regular bell peppers. You could even make confetti stuffed mushrooms by using green, red and yellow peppers at the same time.
Need a substitute for jalapenos? If you’re just looking for a substitute and you don’t mind the heat, you can try serrano or habanero.

Jalapeno Popper Stuffed Mushrooms

Equipment
- Medium Bowl
- Electric Hand Mixer
- Medium Sheet Pan
- Parchment Paper suggested
- Saute Pan If you want to optionally saute the minced jalapeno
Ingredients
- 2 small Jalapenos, minced (See Below)
- 3 pieces Bacon, thick cut, fully cooked and cooled
- 16 ounces Mushrooms, whole, brown
- 3 ounces Cheddar Cheese, shredded
- 6 ounces Cream Cheese, softened
Instructions
- Preheat oven to 350℉. Prepare a sheet pan with parchment paper or spritz with cooking spray.
- (Optional) If you prefer sauteed minced jalapeno, saute over medium heat in two tablespoons of oil until softened then set aside to cool.
- Crumble bacon into fine pieces. You could place it in a zipper bag then use something like a rolling pin, if you like. Set aside.
- In a medium bowl, whip the cream cheese to make it consistently spreadable. It will look like frosting. Hold back about a tablespoon or two of the jalapeno (to be used for garnish) and add the remaining jalapeno to the bowl, along with the crumbled bacon. Gently mix. Set aside.
- Twist off the stems of each mushroom. Using a small spoon or other utensil, fill the inside of the mushrooms with the cream cheese mixture.
- Place each mushroom cap on the sheet pan and place in the center of the preheated oven.
- Bake for 22-24 minutes or until bubbly and the mushrooms have softened.
- Remove from heat and immediately sprinkle with a small amount of shredded cheese, then garnish with the extra jalapeno.

Important: Whenever possible, use a scale for measuring dry ingredients, like flour. This is the more accurate measurement. The scoop and level method of measuring is not accurate because you don’t know how packed your flour has become. If you don’t have a scale, stir the flour lightly then use the spoon and fill method instead.
