Ever since I discovered Pepperidge Farm Puff Pastry, I’ve tried to come up with different ways to use it. The ready-made puff pastry works great for savory and sweet. You can make some really fun and unique recipes with it.
For this recipe, I tried a new design and it turned out so pretty. Making the braid is easy and you can have it finished in no time.

- Parmesan
- Onion
- Pepper
Spinach, with ricotta and parmesan cheeses, is one of my favorite combinations. It’s like a creamier Greek spanakopita filling.

How Do You Make a Puff Pastry Braid?
With the Pepperidge Farm Puff Pastry, each piece is clearly marked with three equal sections. It’s not intentional, I’m sure. It’s just how it’s folded for the box.
The center section is where the filling is going to be spread and the outer sections will be cut and braided.
Start with a pizza cutter at the outer edge. Roll the cutter up to the center, making attached strips. Each strip should be about ¾″ wide. This doesn’t need to be 100% perfect. Just do your best.
Once you have the strips cut on each side, spread the filling evenly.
Start at the bottom and fold over the first strip. Try to press it a little to enclose the edge. Go back and forth, strip by strip. When crossing, don’t go straight across. Try to make it a little diagonal.
If you get close to the top and find that you have too many strips on one side, you can simply fold over two strips from one side at the same time. No one will notice!
Can You Freeze Spinach Ricotta Filling?
If you want to make the Spinach and Ricotta filling ahead of time, you can store it in an air-tight container in the freezer. Freeze it for up to 3 months. Thaw it then give it a good stir before using.

Spinach Ricotta Puff Pastry Braid

Equipment
- Large skillet with cover
- Baking Sheet
- Parchment Paper
Ingredients
- 2 tablespoons Olive Oil
- ½ large Onion, or 1 medium onion, chopped
- 3 ounces Baby Spinach, raw, roughly chopped
- 1 teaspoon Ground Pepper
- ¾ cup Ricotta Cheese
- 3 ounces Parmesan Cheese, about ¾ cup shredded
- 2 Puff Pastry Sheets, used Pepperidge Farm
Instructions
- Preheat oven to 400℉
- Pour olive oil into a large skillet and place on stove top on medium heat. Add chopped onion, stir to coat with oil. Allow to cook until onion is translucent, about 3-4 minutes. Add chopped spinach and pepper. Stir, while heating. Once spinach starts to wilt, turn heat down to low and cover. Allow to cook until spinach is cooked down, about 5-7 minutes. Check often and stir to keep it from burning. Remove from heat and allow to cool.
- In a separate mixing bowl, stir together ricotta and parmesan cheeses. Set aside while the spinach cools.
- On a cutting board, open up and flatten the puff pastry sheet. There are three sections, clearly marked by the folds of the puff pastry. The center section is where the filling will be spread. Using a pastry cutter, cut strips into the side sections up to the center. Each strip should be about ⅓ to ½" wide. Try to be consistent but it doesn't need to be perfect. See photos in post above for more detail. Repeat for second pastry sheet.
- Stir together spinach mixture and cheese mixture. Spread ½ of filling on center section of each pastry sheet.
- Start at the bottom and fold over the first strip. Try to press it a little to enclose the edge. Go back and forth, strip by strip. When crossing, don't go straight across. Try to make it a little diagonal. If you get close to the top and find that you have too many strips on one side, you can simply fold over two strips from one side at the same time. Once you get to the top, try to press in the last strip to enclose the edge.
- Place parchment paper on baking sheet. Place both pastry braids on parchment paper. Put in preheated oven. Bake for 18-23 minutes, until golden. Allow to cool for 10 minutes before serving.
