Ingredients
I know that it’s going to be hard to believe. Trust me. These ingredients simply don’t look like the kind of ingredients you will use to make biscuits, right?
Mom tried Sprite biscuits about two years ago and she’s never looked back. They are now the biscuit of choice around here.
Because of my love of blueberry muffins, it seemed important to give this a try with biscuits.

Bisquick Substitutions
Bisquick is a necessary ingredient for these biscuits It isn’t the same as regular flour or even self-rising flour.
If you need to substitute, you can try any other pancake mix. I’ve used Pioneer Buttermilk Pancake Mix with success.
I haven’t tried it, but I was able to find a Homemade Bisquick recipe, if you want to give it a try.
Frozen Blueberries
I’ve used frozen blueberries, without thawing. It makes it easier to fold in the dough without turning the dough purple.
Because I’ve used frozen blueberries, the bake time is a little bit longer. It makes the dough cold and it needs to come up to heat.
If you want to use fresh blueberries, you may not need to bake as long.
If you can find them, you can also try frozen wild blueberries. They’re smaller and you can fit more of them in each biscuit. It’s a win-win!
If your blueberries are thawed, you can rinse them in cool water to get rid of a lot of the juice. Try using them frozen, though. It seems like you would be washing all the goodness down the drain.
Sprite
Sprite is, of course, a lemon lime carbonated soda. Mom buys Sprite only to make these biscuits. You can now buy it in these cute little cans. It means there’s not as much leftover. It’s the perfect size if you don’t drink a lot of Sprite or 7-Up.
The Sprite reacts to the baking soda in the Bisquick to get these biscuits to rise. Be sure to use a fresh can or bottle of soda. You don’t want it to be flat or it won’t work.
How to Make Powdered Sugar Glaze
This powdered sugar glaze is the perfect drizzle for these blueberry biscuits. It’s quick and easy to make and doesn’t require refrigeration.
Using a ziploc bag makes cleanup a breeze. You don’t need a pastry bag for such a quick and easy procedure.
This is the only time that I use imitation clear vanilla extract. Most of the time, I use our own homemade vanilla, but I like powdered sugar glaze to be as white as possible.

Easy Bisquick Blueberry Biscuits

Equipment
- 9" cake plate
- Biscuit cutter, or drinking glass or anything else to cut the biscuits
Ingredients
- 2 ½ cups Bisquick, divided
- ½ cup Sprite, or any other lemon lime soda
- ½ cup Sour Cream
- 3 tablespoons Butter
- 1 cup Blueberries, frozen
Vanilla Drizzle (optional)
- ⅔ cup Powdered Sugar
- 1 teaspoon Vanilla Extract
- Water
Instructions
- Place 3 tablespoons butter in 9" cake pan and place in oven. Turn on oven to begin preheating to 425℉.
- Separate frozen blueberries as best as possible.
- Place TWO CUPS Bisquick into medium bowl. Add sour cream and carbonated soda. Stir briefly.
- Sprinkle ¼ cup Bisquick on clean, dry surface of counter top. Pour out bowl of dough on top of Bisquick on countertop. Sprinkle remaining ¼ cup Bisquick on top of dough.
- With your hands, quickly bring everything together to form a flat ball. Dough will be sticky. Try to avoid the tendency to add too much Bisquick or working the dough too much.
- Slowly fold in frozen blueberries. Pat the dough out until it's about ½" tall or so.
- Remove cake pan from stove once butter is melted and twirl a little to coat the bottom of the pan with melted butter. Place on a trivet.
- Cut biscuits with biscuit cutter and place in cake pan, on top of melted butter. Reform the dough as necessary to get all the biscuits out of it.
- Bake in preheated oven 14-18 minutes until light golden. Allow to cool at least 20-25 minutes before adding drizzle.
Vanilla Drizzle
- Place powdered sugar in a small bowl. Add in vanilla extract and ONE TEASPOON water. Stir until incorporated. Continue to add ONE TEASPOON water at a time until the glaze is the consistency desired. Be careful. You can add, but you can't take away. I used a total of three teaspoons water.
- Once biscuits have cooled, place the powdered sugar glaze in a ziploc bag. Push it down into one corner and snip a small hole in the corner then hold it over each biscuit to cover as much as desired.
