Roasted Red Potatoes is an easy side dish you can serve with anything from hamburgers to scrambled eggs. The crispy crunch is perfect with just about everything.
This recipe is so easy. It takes almost no time to chop the potatoes. Keep the peels on. Just make sure your potatoes are clean. Potatoes are grown in the ground after all.

Oven Roasted Potatoes are easy to make!
Once you chop the potatoes, you will toss them with a little bit of olive oil and seasonings then spread out on a baking sheet. That’s all. Can you believe it?!
I love potatoes, especially when they have that little bit of crispy crunch around the edges.
I have a serious love for red and white potatoes. They seem to have a sweeter, smoother taste than russet. I love all potatoes, though, so I’d be willing to give all of them a try in this recipe. Learn more about the different potatoes.
What Seasonings Would You Like?
I don’t like to have boring potatoes. Spice it up! I’ve used:
- Oregano
- Salt
- Cayenne
- Cumin
- Ancho
To make sure that you get all these spices evenly distributed, I like to mix them up in a little bowl before adding them to the chopped potatoes.
I’ve used my favorite seasoning combination, but here’s your opportunity to experiment with your favorite seasonings too. Use some jalapeno powder or paprika. Try it with some garlic or onion powder too.
How to Serve Roasted Red Potatoes
These roasted potatoes will go with just about anything. Try them with a hamburger. Serve them with scrambled eggs. Enjoy them with a nice grilled steak.

Roasted Red Potatoes Recipe

Ingredients
- 2 pounds Red Potatoes, about 5 or 6
- ⅛ cup Olive Oil
- 1 teaspoon Oregano
- 1 teaspoon Salt
- ½ teaspoon Cayenne Pepper
- ½ teaspoon Cumin
- ½ teaspoon Ancho Powder
Instructions
- Preheat oven to 350℉.
- Wash potatoes well. Don't peel. Cut into bite sized pieces. Place in a large mixing bowl.
- Pour olive oil over potatoes.
- In a small bowl, mix oregano, salt, cayenne, cumin and ancho powder. Pour over potatoes.
- Mix potatoes well.
- Spread potatoes evenly on baking sheet and place in preheated oven.
- Cook for 15 minutes, with spatula, mix up and turn potatoes. Cook for another 15 minutes, turn again. Cook for another 15 minutes and remove from oven. Serve.
