This Oatmeal Honey Pistachio Cookies recipe makes a delicious, chewy cookie with an unexpected and tasty crunch from chopped honey pistachios.

Ingredients
You’ve probably made cookies dozens of times so you already know about your typical ingredients.
- Flour
- Sugar
- Butter
- Eggs
But, let’s talk more about the non-typical ingredients.
Old Fashioned Oats vs. Quick Cooking Oats
The Quick Cooking Oats on the left are clearly chopped into smaller pieces. The Old Fashioned Oats on the right show each individually. If you only have Old Fashioned Oats and you prefer a less textured cookie, you can pulse the oats in the blender, but only in short bursts. You don’t want to make oat butter, you just want a little bit of choppy cutting.
If you want to see a more direct difference between using Old Fashioned Oats and Quick Cooking Oats, you can look at my Oatmeal Carrot Cookies which use quick cooking. The cookie is much less textured than these pistachio cookies. This is a decision that is left to you and your own preferences. Either will work for this recipe.
The only type of oats you would want to stay away from are the Steel Cut Oats. They are completely different and take about three times longer to cook than Old Fashioned.
Honey Roasted Pistachios
So, I’ll admit that I developed these cookies solely because I found these delicious Honey Pistachios. They’re roasted pistachios but they’ve got a great, sweet coating instead of what you normally find with salt roasted.
They are wonderful right out of the bag but I was certain that the sweet honey exterior would make a great cookie too. I was not disappointed.
If you can’t find the honey pistachios, using regular roasted pistachios will work for you as well.
Before you use them in this recipe, be sure to chop them up a little. Whole pistachios are a little big for cookies.
Do You Chill The Cookie Dough?
For this recipe, it came together very quickly and chilling wasn’t necessary. In fact, if the dough is too cold, you’ll get more of a ball of cookie instead of something that spreads out like this.
Even though I like to chill the dough for some recipes, this recipe doesn’t require it. I think the oats help with keeping the cookie shape. Unless your butter has turned to liquid, you shouldn’t need to chill it at all.

- Medium mixing bowl
- Large Mixing Bowl
- Baking Sheets
- Parchment Paper
- 1 ½ inch Cookie Scoop
- Wire Rack
Ingredients
- 90 grams All Purpose Flour, about ¾ cups spoon and fill
- ½ teaspoon Baking Soda
- ½ teaspoon Cinnamon, ground
- ¼ teaspoon Salt
- 1 ½ cups Old Fashioned Oats
- ½ cup Unsalted Butter, 1 stick, softened
- ½ cup Granulated Sugar
- ½ cup Light Brown Sugar, packed
- 1 large Egg
- 1 teaspoon Vanilla Extract
- 1 cup Honey Pistachios, chopped
- Cooking Spray, like spray Pam
Instructions
- Preheat oven to 375℉.
- Whisk together flour, baking soda, cinnamon, salt and oats in medium bowl until well combined. Set aside.
- Beat butter and both sugars in large bowl until creamy. Add egg and mix well. Mix in vanilla extract.
- Gradually add oat mixture, about one cup at a time, mixing well after each addition.
- Line baking pan with parchment paper and lightly spray with cooking spray. With 1 ½" cookie scoop, measure out a piece of dough and place on parchment paper lined cookie sheet, about 2 inches apart.
- Place cookies in preheated oven for 7-10 minutes, until light golden brown. The center won't look completely done but will finish up cooking outside the oven, while still on the pan.
- Remove from oven. Cool in pan for 10 minutes then remove to wire rack to cool completely.
