For this easy cheese danish, I was so thrilled to find some ready made packaged Puff Pastry. I’ve used the Pepperidge Farm Brand Puff Pastry.

What is Mascarpone Cheese?
Mascarpone cheese is another thing new to me. Mom has been buying all kinds of different things for me to use and “play”. I had to look it up to get more information.
Mascarpone is very similar to cream cheese. The major difference is that cream cheese is made with whole milk but Mascarpone is made with heavy cream.
If you can’t find Mascarpone cheese at your market, you can make this easy cheese danish with your own homemade cheese from this recipe at Bigger Bolder Baking so you can easily make it yourself.
Baking with Mascarpone Cheese
For this recipe, I’ve softened this cheese only enough so it will spread easily. It’s not as dense as cream cheese. Don’t try to heat it if you’re in a hurry. It will melt and it won’t be spreadable. It will only be leak out everywhere. You don’t want that.
You can substitute cream cheese, if you prefer. I encourage you to try the Mascarpone cheese, though. It’s so buttery and seems to melt right into the puff pastry. With cream cheese, you’ll still see the cheese after baking. With Mascarpone cheese, you see the golden butter look of goodness.

I’ve used Puff Pastry in another recipe here at 24Bite. I used cream cheese and raspberry filling to make beautiful little Raspberry Pinwheels. These would be beautiful for Valentine’s Day. Make them both for a party tray!

Cheese and Chocolate Chips Puff Pastry

Ingredients
- 2 sheets Pepperidge Farm Puff Pastry, thawed to room temperature
- 8 ounces Mascarpone Cheese, softened
- 2 tablespoons Sugar
- ½ cup Chocolate Chips, size: mini, divided
- Cooking Spray
Instructions
- Preheat oven to 400℉.
- With hand mixer, mix cheese and sugar together. Set aside.
- Spray baking sheet with cooking spray.
- Unfold pastry sheet on lightly floured surface. Remove parchment paper and spread HALF the cheese mixture on top of pastry. Evenly distribute HALF the chocolate chips on top. Roll up jelly roll style. Slice into 12 equal slices. Lay slices on baking sheet. Repeat for other pastry sheet.
- Bake 15 minutes or until golden. Sprinkle with course sugar, if desired.
