This Tortilla Quiche Bake is made with cottage cheese and spinach, bringing a viral TikTok recipe to your kitchen. It’s a super easy and tasty breakfast you won’t want to miss.
Make this tortilla quiche for breakfast, brunch, lunch or dinner. It’s not only easy and delicious, but it’s quick and packs a lot of protein. Grab this instead of cereal or a donut to give you a good start to the morning.
What Is Tortilla Quiche?
This Tortilla Quiche is a recipe hack that uses a tortilla as the pie crust. It makes it easy to slip out of the pan and then cut with a pizza cutter or knife. And, you can hold it in your hand like you would pizza, making it great for on-the-go eating.
The viral tiktok video starts with a simple burrito size tortilla in a pie plate. You won’t need to add any spray or other fat because that will just add moisture that you don’t want to the tortilla.
When I saw the video, the eggs and other ingredients were beaten right there in the tortilla, but I think a bowl is simply more efficient. And, who wants to take the chance of breaking or cutting the tortilla with the fork?
Ingredients
The ingredients I’ve used are pretty simple.
- Eggs
- Cottage Cheese
- Shredded Cheese (just use whatever you have)
- Chopped Baby Spinach
- Chopped Cherry or Grape Tomatoes
- Chopped Onions
- Sriracha Sauce
I used a little bit of salt, but you can omit it. The cheeses add quite a bit of sodium already.
Variations and Add-Ins
You can use other things you have available like chopped mushrooms, chopped asparagus, bell pepper, artichoke hearts. Get creative here, but don’t go too wild. The pie plate will only hold so much.
If you want to add even more protein, you can add chopped bacon or breakfast sausage. Just make sure to cook it first. You can also buy diced ham in zip bags and you can add some. Just remember not to add so much that it won’t fit the pie pan!
Next time, I want to try one of those tomato basil or spinach tortilla wraps instead. If you don’t have burrito-size tortillas, try using three smaller flour tortillas overlapping. I haven’t tried corn tortillas yet, but that would make it gluten free, if it works.
Baking Until Just Done
Be careful not to overbake. The eggs will brighten and there won’t be any jiggle in the middle. Don’t bake until the eggs or golden or brown. They’ll have a burnt taste to them at that point.

How To Store The Leftovers
If you’re lucky and you actually have leftovers, you can store them in the refrigerator in an air tight container or bag for up to three days. The tortilla won’t be crispy anymore so you may want to reheat it in the air fryer instead of the microwave.

Equipment
- Pie Pan (pie plate) compatible with oven or air fryer
- Medium mixing bowl
Ingredients
- 1 Burrito Tortilla
- 3 large Eggs
- ½ cup Cottage Cheese
- ½ cup Monterey Jack Cheese, or other preferred cheese, shredded
- ½ cup Baby Spinach, chopped
- ½ teaspoon Sriracha Sauce
- ½ teaspoon Salt
- 8 small Cherry Tomatoes, or grape tomatoes, chopped
- ¼ cup White Onion, chopped
Instructions
- Preheat oven to 350℉ (325℉ for air fryer).
- On a dry pie pan (no fat or spray), place the flour tortilla in the center and press down so the edges fill the pan. If the tortilla is older and wants to break, you may be able to soften it in the microwave for 20 seconds.
- In medium mixing bowl, place three eggs and mix with a fork until combined.
- To the mixing bowl, add cottage cheese, shredded cheese, chopped spinach, chopped tomatoes, chopped onion, sriracha and salt. Mix well.
- Pour egg mixture into center of tortilla and spread to the edges.
- Place in center of oven and bake for 20-25 minutes, until a knife comes out clean. Do not overbake.
