These Cheesy Garlic Dinner Rolls are made with ease in a Bread Machine. You get all the homemade cheesy goodness without all the kneading.
Ingredients
The base for these garlic rolls is actually the same as my Pizza Dough Recipe. For the dough, you’ll need:
- Bread Flour
- Avocado Oil (or Olive Oil)
- Yeast
- Sugar
- Salt
Once you have the dough made and refrigerated for 30 minutes, you’re ready to make the filling:
- Butter, Salted or Unsalted
- Garlic Powder
- Parmesan Cheese (powdered)
After baking, brush on a little melted butter then sprinkle with garlic salt, if you like.
Can I Use Grated Parmesan Cheese?
I don’t use dried Parmesan Cheese very often because I prefer fresh grated, but this recipe works really well with it. The cheese gets incorporated throughout. But, you can use grated, if you like. I would probably sprinkle it on top of the rolled dough instead of mixing it into the softened butter.
What If I Don’t Have Bread Flour?
You can certainly use All Purpose Flour, if that’s what you have available. The rolls may not end up with the same texture, but they will still taste just as good.
If you have any Vital Wheat Gluten, add about 1 ½ tablespoons to the All Purpose Flour to help it rise.
Can I Refrigerate The Rolls After Assembling?
If you’re planning on saving the rolls for baking and serving later, you’ll need to plan ahead.
You won’t want to refrigerate twice so you’ll skip the 30 minutes refrigeration in the recipe (Fresh bread doesn’t like more than one refrigeration.). Proceed to roll out and cut to spiral. Put in your baking dish then cover tightly. Refrigerate up to 24 hours. Allow to warm on the counter for at least an hour to give the rolls a chance to come to room temperature and rise to double, then bake normally.
How To Cut Your Dough
This technique is something new that I recently saw online. Instead of rolling up the dough into one big log, I’ve cut the dough into strips then rolled each one individually. This made the rolls so much easier to make into a pretty circle. In my opinion, it’s definitely easier than cutting or using baker’s twine. You can try either way, but this was so much easier for me so it’s something you should try at least once.
You can cut from the short end or the long end. You’ll have fewer rolls when cutting from the long end, but they will be bigger and may require a little more baking time.
Pro Tip. Instead of rolling up your dough into one big roll then cutting, try cutting 1 ½″ strips with a pizza cutter. You can easily roll them up individually then place in your prepared baking dish.

Equipment
- Bread Machine (Cuisinart Bread Maker 2 Pound used)
- Glass Measuring Cup 2-cup size, or small bowl
- Rolling Pin
- Mixing Bowls
- Pastry brush
- 9 x 13" baking dish
- Warm, Dry Cloth
Ingredients
Dough
- 1 packet Active Dry Yeast, or 2 ¼ teaspoons
- 1 ⅛ cup Very Warm Water, 110° to 115°
- 2 tablespoons Granulated Sugar
- 2 tablespoons Avocado Oil, or olive oil
- 450 grams Bread Flour, (about 3 ¾ cups spoon and fill) plus a little more for rolling
- 1 teaspoon Salt
Filling
- 8 ounces Butter, salted or unsalted, softened
- ¾ cup Parmesan Cheese, dried
- 2 tablespoons Garlic Powder, granulated
Topping
- 2-3 tablespoons Butter, salted or unsalted, melted
- Garlic Salt, optional
- Italian Seasoning, optional
- Cooking Spray, like Pam Spray
Instructions
Dough
- In a small bowl, stir together yeast, water and sugar. Set aside. After 10 minutes, check that it's bubbly. If so, continue. If not, you may want to try again with fresher yeast.
- Add yeast mixture to bread pan in bread machine.
- Add oil to bread pan.
- Add flour to bread pan.
- Add salt to bread pan.
- Set bread machine to make dough only. Once finished, take out, cover with plastic wrap and put in refrigerator for 30 minutes.
Filling
- In a small bowl, with a fork or spoon, mix together softened butter, Parmesan and Garlic.
- Sprinkle a bit of flour on your work space. Roll out the dough to ¼", about 10×16" rectangle.
- Spread filling evenly over the top of the dough rectangle.
- Using pizza cutter or any other pastry cutter, cut 1 ½" strips of dough from the short edge. Roll each strip into a circle (like a cinnamon roll).
- Spray the baking dish with cooking spray or place parchment paper. Arrange the rolls evenly. Cover with a clean, dry cloth and allow to rise until double, about 1 hour.
- Preheat oven to 350℉. Place baking dish with rolls in the center of the oven and bake 20-25 minutes until golden.
- Once removed from oven, brush with melted butter. (Optional) Sprinkle with garlic salt and a bit of Italian seasoning.
