Authentic Spanish Rice

It won't matter whether you call it Spanish Rice or Mexican Red Rice when you get a dish this easy and authentic.

Start by infusing the olive oil with part of the onion. Sauteeing the onion this way adds additional layers of flavor.

Saute the rice next. This seals it so it doesn't release as much gluten. No more sticky rice!

Serve with a roasted serrano chile on the side some spicy heat, if you like.
