Make Your Own Tamales This Holiday

Part 1: Homemade Tamale Sauce

Start Your Sauce The Day Before


8  Dried Red Chiles 2 Arbol peppers 2 Tomatoes 4 Garlic Cloves 3 c Chicken Stock 1 tbs Ground Cumin 1 tbs Salt 1 tbs Onion Powder

Place all chiles, tomatoes and garlic in a medium sauce pan. Cover with chicken broth and cook until soft, about 20 minutes.

Using a slotted spoon, place the softened chiles, tomatoes and garlic in a blender.

Add salt, cumin and onion powder to blender. Add some chicken broth to help the blender get going.

Simmer the sauce for about 15 minutes until slightly thickened. Makes one quart, enough for about 45-55 tamales.
