Instant Pot Tamales

2 c Masa Harina 2 tsp Baking Powder 1 tsp Onion Powder 1 tsp Garlic Powder 1 tsp Ground Cumin ½ tsp Salt ½ tsp Jalapeno Powder ½ c Safflower Oil 2 oz Salsa Verde 2 c Chicken Stock

Masa Dough  Ingredients

Mix all the Masa Dough ingredients together. Pour the chicken stock a little at a time so you can adjust as necessary.

The filling is only 3 ingredients: shredded chicken, chopped jalapenos and salsa verde.

It takes practice to assemble the tamales. Just remember that it doesn't need to be perfect.

The recipe only makes about 15 tamales so they fit easily in an Instant Pot. You could use a tamale steamer, if you prefer.

Let one of the tamales cool a minute or two before opening it up. If it separates easily, then it's ready to eat!
