Chipotle Chicken Stuffed Bell Peppers

Shredded Chicken Canned Tomatoes Tomato Sauce Salt Chipotle Powder Worcestershire Sauce Avocado Monterey Jack Cheese


Cut the bell peppers in half lengthwise. It's easy to scoop the seeds and membranes out with a spoon.

Mix together the shredded chicken, tomatoes and seasonings. Scoop an even amount into the cavity of each bell pepper.

Place some sliced avocado on top. I know it may sound strange but you'll only be heating it long enough to melt the cheese. Trust me!
