I usually have all of these ingredients readily available in my pantry and I love quiche! I make it frequently and I will sometimes make two at a time to freeze them in portions so I can have quiche any time I want.

You’ll need just a small amount of gluten free baking mix. I used Gluten Free Bisquick. You can easily substitute regular Bisquick for this recipe.

Ingredients

  • 3 Large eggs
  • 1 1/2 Cup 2% milk
  • 1 Cup shredded cheese
  • 3/4 Cup fresh spinach chopped
  • 3/4 Cup fresh mushrooms chopped
  • 3/4 Cup gluten free baking mix like Bisquick
  • 1/2 Teaspoon salt
  • 1 Teaspoon red sauce like Frank’s
  • cooking spray like Pam

Instructions

  • Preheat oven to 350 degrees
  • In large bowl, whisk eggs until mixed
  • Add remaining ingredients except cooking spray
  • Mix together well
  • Spray 9″ pie plate with cooking spray
  • Pour egg mixture in pie plate and level off with spatula as needed
  • Bake 45 minutes or until toothpick comes out clean
  • Let cool completely before cutting
  • Refrigerate leftovers

Chicken Spinach and Mushroom Pasta Recipe

I know it may sound strange but Christian absolutely loves spinach and mushrooms! He’s loved spinach since he was little which is fairly amazing since he’s always been such a picky eater.

Christian prefers a one-dish meal. It’s just so easy to grab a bowl and a spoon when you’re a busy teenager!

I had purchased this spinach to make some pesto but I forgot to get basil. Next time!

You will only be using a small amount of the chicken broth. If you can’t find another use for it right away, you will want to consider freezing it for later. I like to freeze it in ice cube trays and, once frozen, put in a freezer bag for storage.

Add a cube or three to water for making Spanish rice or pop in a cube when making green beans for extra flavor.

Christian minced four large cloves of garlic. This is a really handy tool for mincing garlic. It’s easy to use and does a great job. I suggest rinsing it out immediately after use so it’s not difficult to clean.

We used olive oil to cook the onions and garlic. Use a different oil, if you like. Ghee would give it a nice flavor too.

I always use baby portobello mushrooms but feel free to substitute your favorite.

Don’t worry about the spinach leaves looking like they’re going to fall out or take over the entire pan. In just a few minutes, they’re going to reduce in size.

Milk is added as a final step since you don’t want to overcook it. It could scorch or burn. It’s better to add it at the end and bring it to heat and then finish up.

Now, it’s time to mix it all together! If you have used a big enough skillet, you can mix it all in the same skillet. My skillet wasn’t quite big enough for the pasta to be mixed, so we used a mixing bowl.

Ingredients

  • 8 Ounces Rotini pasta
  • 2 Tablespoons olive oil
  • 4 Large garlic cloves minced
  • 1 Medium onion chopped
  • 1 Cup mushrooms chopped
  • 1/2 Teaspoon ground pepper
  • 1/2 Teaspoon salt
  • 1 Pound chicken breast meat
  • 1/4 Cup chicken broth or stock
  • 3 Ounces baby spinach
  • 1/4 Cup milk whole
  • 1-1/2 Cup Parmesan cheese shredded

Instructions

  • Begin boiling water to prepare pasta according to package instructions.
  • Pour oil in skillet and swirl to coat.
  • Add onions and garlic to pan and heat on medium high until slightly tender. Add mushrooms, salt and pepper. Cook about 3-4 minutes. While cooking, cut chicken breast meat into 1″ pieces.
  • Add chicken and continue cooking until chicken is only slightly pink (about 5-6 minutes more).
  • Don’t forget to check the water for the pasta!
  • Add chicken stock and lower heat. Simmer for about 10 minutes.
  • Add baby spinach and cover. Continue to simmer (covered) about 5 minutes.
  • Stir in milk and bring to boil. Remove from heat.
  • Pour chicken mixture into large bowl. Drain pasta and add to bowl. Reserving 1/2 cup Parmesan cheese, add only 1 cup of Parmesan cheese to bowl and toss together.
  • Use remaining Parmesan cheese to garnish each plated serving.

Lasagna Pizza with Homemade Meat Sauce Recipe

Make Red Sauce

For this recipe, I’ve started with the Meat Sauce. It’s important to start with the sauce in order to save time. It will need to simmer for a bit while you’re preparing the other ingredients.

After you brown your ground beef, be sure to chop it. Unlike a pizza you might normally have, you don’t want clumps of ground beef. You’re making a Meat Sauce and you want everything to be finely chopped.

It’s best to get a nice fine dice with the vegetables so use an Ulu, if you can. Not only is it easier but it’s safer as well.

For the carrot, I used one of those long zesters like you would use to make lemon or lime zest. If you zest it, it will cook so much more quickly.

Assemble the Pizza

Spreading the ricotta is easy, just like frosting a cake. It’s a little more difficult to get the Meat Sauce on the top of the ricotta. If you distribute little piles of Meat Sauce on top then carefully smooth, it will be easier.

Garnish with chopped green onion and red pepper flakes. Serve with a fresh garden salad. My mom says to serve it with a nice pinot noir or merlot.

Ingredients

Meat Sauce

  • 1/2 pound Ground Beef
  • 1/2 cup Onion diced
  • 1/2 cup Bell Pepper diced
  • 1/2 Carrot minced or zested
  • 4 Garlic Cloves minced
  • 1 tablespoon Olive Oil
  • 3 ounces Tomato Paste
  • 1/2 cup Chicken Stock
  • 1/2 teaspoon Oregano
  • 1/2 teaspoon Basil
  • 1/2 teaspoon Red Pepper Flakes
  • 1/2 teaspoon Salt

Pizza Toppings

  • 1 cup Ricotta Cheese
  • 1/2 cup Raw Spinach chopped
  • 1/2 cup Parmesan Cheese shredded
  • 2 cups Mozzarella Cheese shredded

Instructions

  • Make pizza dough according to instructions or use a pre-purchased pizza crust, if you prefer. Note that, if using the pizza dough at the link, you will need to start several hours earlier or the day before.

Make Red Sauce

  • In medium saucepan, on medium high heat, crumble and cook ground beef, about 10 minutes. Drain, reserving about 2 tablespoons fat. Remove cooked beef from pan and finely chop. Return to pan.
  • Add onions, bell pepper, carrot and garlic. Stir. If it's really dry and sticking to pan, add the bit of olive oil. Cook until onions are translucent and fragrant, about 6-7 minutes.
  • Add tomato paste and 1/4 cup chicken stock. Stir. The sauce needs to be easily spreadable without clumping together in big lumps but not so wet that it will drain off the pizza. Think "ketchup consistency".
  • Add remaining stock, about a tablespoon at a time until you get the desired consistency. Add seasonings. Reduce to simmer, stirring frequently, and allow to continue cooking while preparing the remainder, about 15 minutes.

Assemble Pizza

  • Preheat oven to 425°.
  • Spray pizza pan with cooking spray. Place crust on pan and pinch the edges a little, if you like. This helps to catch the sauce from spilling over.
  • In small mixing bowl, mix together ricotta cheese, spinach and Parmesan cheese. Evenly spread ricotta mixture on the dough with the back of a spoon or spatula.
  • Evenly distribute meat sauce over ricotta. Evenly distribute mozzarella cheese over top.
  • Cook for 15-20 minutes, or until done. Cool slightly and cut into 8 pieces. If desired, garnish with chopped green onion, freshly cracked pepper and red pepper flakes.

Basil and Spinach Pesto Recipe

We harvest the basil before it flowers. It can get bitter once it flowers. And, I feel the same way about spinach. I always use baby spinach leaves instead of regular spinach leaves which can also be very bitter.

There wasn’t enough basil to make a full 8 ounces of leaves so I supplemented with spinach leaves.

I cut all the leaves from the tough stems before processing. You don’t want the stem in your pesto. It’s not going to break down as quickly as the leaves and I wasn’t ready for all that roughage. There is such a thing as too much fiber! I draw the line at stems.

As you can see, the pesto is a nice bright green, unlike the darker color when you buy it in a jar. That’s the difference between fresh, raw pesto and the pesto that is cooked for preservation in the jar. Such a beautiful color and it adds such a pleasant touch to any dish when the color is so bright.

I literally ate several spoons of this by itself before reluctantly putting it in the jar and putting it in the refrigerator. I plan on using half of it with pasta and diced chicken. I’ll use the other half as the sauce on a pizza. Yum!

Ingredients

  • 1/2 cup Pine nuts
  • 8 ounces Basil and Baby Spinach leaves washed and pat dry
  • 1/2 cup Olive Oil extra virgin
  • 1 cup Parmesan cheese shredded
  • 1/2 teaspoon pepper ground

Instructions

  • Place the chopping blade in the food processor and process the pine nuts until finely chopped.
  • Add enough basil and spinach leaves to fill the processor bowl and process until finely chopped. Continue adding more leaves to bowl to process further, until all leaves are in the bowl and processed.
  • Remove the pusher from the sleeve at the top of the processor and while the blade is still processing, slowly pour in the olive oil.
  • Add Parmesan cheese and pepper and pulse lightly until well mixed.

Notes

You can use all basil (or all spinach) in this recipe, if you prefer. The spinach is added only to supplement and bring the measurement up to the eight ounces total.
This recipe makes about 14 ounces of pesto. Calorie count is by ounce (two tablespoons).

Chicken Alfredo Pizza with Spinach and Mushrooms Recipe

I think there must be nothing that Christian likes more than chicken, spinach and mushrooms.

A couple of days ago, he insisted that he wanted it on a pizza so I immediately got the bread machine down and told him to “go for it!”

I have had this bread machine since 2013 and I couldn’t be happier. I have used it only for making dough and it’s been an incredibly handy tool. I can simply add my ingredients and walk away. The baking feature works as well; I simply prefer to cook my bread in a bread pan for the traditional bread shape that will fit into the plastic bread bags I use.

Homemade Pizza Dough

I prefer the homemade pizza dough I make in the bread machine. The recipe for Homemade Pizza Dough is here. If you want to make your own dough, I recommend that you check out that recipe because it’s in the bread machine and SO EASY!

Use my pizza dough instructions or your own or even the pre-packaged completed dough, if you prefer. If you’re using homemade pizza dough, try to refrigerate it for at least 4 hours or overnight.

People were shocked when they found out that I still had a Pizza Pizzazz that worked. I bought this because it seems a lot safer for kids to make their own pizzas and it means that the oven doesn’t have to heat up the entire house.

Spray the pan with cooking spray and, after rolling out the dough, pinch up the edges a little and place it on the pan.

Add the Sauce and Toppings

Since this recipe is for two pizzas, split the alfredo sauce between them. You can use any alfredo sauce you like, even your own favorite recipe.

Add the chopped fresh spinach.

Add the diced cooked chicken and mushrooms. Use fresh mushrooms, if you like. We always keep canned mushrooms in the pantry when we don’t have some fresh ones.

Sprinkle the cheese everywhere.

This takes about 15-20 minutes when the dough is pretty thin like this. It will probably be more like 25-30 minutes if it’s a stuffed crust. If you want a stuffed crust, I recommend that you cook the crust halfway, put on the toppings then put it back in the oven to finish cooking. This stops it from being undercooked in the center.

  • 1 14.5 oz jar Prego Homestyle Alfredo Sauce split into two portions
  • 1 cup chopped raw spinach split into two portions

  • 2 cups shredded mozzarella cheese split into two portions

  • If you are using homemade pizza dough, begin at least 3 hours before you plan to prepare the pizza to complete the kneading and rising process. It’s better to refrigerate for 3 or more hours after that, but it’s not entirely necessary, if you’re in a time crunch. Halve the dough equally and roll out on a lightly floured surface.
  • Preheat oven to 425°.
  • Spray pizza pan with cooking spray. Place crust on pan and pinch the edges a little, if you like. This helps to catch the sauce from spilling over.
  • Spread half the jar of sauce on each pizza. Evenly distribute chopped spinach, chicken and mushrooms. Top with cheese.
